Belgium style waffles, sandwiches and frites is what you can expect to find at Bruges Waffles and Frites on 541 E 12300, but the restaurant had to evolve into what it is today.
Pierre Vandamme was born and raised in Brugge (Bruges) Belgium, moved to Salt Lake City in 1994 and started selling an adapted recipe of his families’ Liege waffle off a vending cart on Main Street Salt Lake City ten years later, but it was limited to the summer. Belgium style fries “frites” were soon added to the menu and were very successful.
The vending cart became so popular that Pierre eventually opened a year round operation with a real kitchen. In 2010, Pierre's brother-in-law joined him from Belgium to help the business. Bruges has since then grown to four locations including Sugar House, Provo and recently, Draper.
The sandwiches are average except for the fact that instead of bread, thin pieces of Belgium waffles hold them together, giving each sandwich a sweet and salty taste in each bite. They go great with a side of frites, which are french fries that are fried twice in animal fat.
The waffles have the perfect amount of crunch with a sugary sweetness that melts in your mouth with all sorts of toppings from fruit, chocolate, cinnamon, creme, and ice cream, setting the tone for the entire restaurant.
